Considered a luxury item in sushi bars, escolar is rich
in healthy fats and delicious as sushi
and sashimi. It can also be broiled, grilled, baked or sautéed. Our frozen
escolar is a product of Interstate Seafood and originates from Korea. It is
hand cut and vacuumed packed here at our facilities in San Diego, California.
Escolar (Lepidocybium flavobrunneum) is often
referred to as butterfish, walu/waloo, or super white tuna. The latter is particularly
problematic as it gets confused with albacore. Albacore tuna is the only tuna species
which may be marketed as "white meat tuna" in the United States.
Tip: Use caution when eating escolar for the first time. Because
of its high fat content, escolar may cause gastrointestinal problems for some
people. We recommend you eat only small amounts (less than 4 ounces) at a time.
