Considered a luxury item in sushi bars, escolar is rich in healthy fats and delicious as sushi and sashimi. It can also be broiled, grilled, baked or sautéed. Our frozen escolar is a product of Interstate Seafood and originates from Korea. It is hand cut and vacuumed packed here at our facilities in San Diego, California.

Escolar (Lepidocybium flavobrunneum) is often referred to as butterfish, walu/waloo, or super white tuna. The latter is particularly problematic as it gets confused with albacore. Albacore tuna is the only tuna species which may be marketed as "white meat tuna" in the United States.

Tip: Use caution when eating escolar for the first time. Because of its high fat content, escolar may cause gastrointestinal problems for some people. We recommend you eat only small amounts (less than 4 ounces) at a time.

Like An Amusement Park Ride March 20, 2014

I LOVE the "white tune" at our east-coast sushi restaurants (escolar) - it's my favorite.  I tried the "local US/Mex" version first - it didn't seem as buttery as this Korean one and I had to do more prep cutting on the US version (the Korean one was in perfect rectangular blocks - much better).  I have never had any digestive issues with escolar before, but the Korean one gave us some issues.  Granted, we ate about 12 pieces of sushi each, and it wasn't as devastating as some others experience, but it is like taking "Alli diet pills" or eating a bunch of potato chips cooked in Olean.  Was it worth it?  Hell yes!  The Korean one was much more buttery than the US one.  The US one looked like it was a tail section.  I heard the tail section has less fat (which is what causes the digestive issues).  Whatever - it was good and I will eat it again.  Keep portions low, try it on Friday night and don't make plans for Saturday or Sunday - just in case.

Not actually tuna, but even better (or butter). Got 2.2 lbs of this (when it was 2.2 offered last week) and this stuff is AMAZING! Definitely one of my favorite fishes to get at sushi bars, and the quality here at catalina is superb. You will not regret this fish! Makes for amazing sashimi.

I haven't eaten butter in a LONG LONG LONG time so when I first tried escolar (a while back) I almost spit it out because it was melting in my mouth just like butter... and tasted TOO GOOD TO ACTUALLY BE FISH! Don't you worry though, I didn't spit it out and in fact I ordered another go around because this fish is SUBLIME!

I recommend it for anyone who adores Chilean Sea Bass &/or Black Cod/Sable Fish! But be forewarned... some people have digestive issues with this fish... I myself: DO NOT! :P

OMG!  That about sums it up!!  This fish is so amazing!!  I tried it for the first time with a sushi party I threw on Sunday night, and it was truly amazing!  I served it both as sushi, and also seared a chunk and then sliced it and gave it a bit of garlic, salt, and lemon, and it was to DIE for!!
