If you thought it was impossible to make sushi yourself because you didnít know enough about selecting and purchasing the right kind of raw fish, you are in for a real treat.

For the past twenty-five years our fresh seafood and frozen seafood products have been sold to fine dining establishments and wholesalers who sell them to high quality restaurants around the world. We offer the same great products shipped to your door overnight for excellent prices.

The fish that we carry can be divided into two main categories: open water fish (pelagic) and bottom fish (benthic). Open water fish are larger fish that travel across all the oceans. The meat of pelagic fish tends to be firmer and have a robust flavor. Open water fish we carry include Bluefin tuna, albacore, swordfish, and yellowtail jack. Bottom fish are found near the coast either in shallow waters or on the bottom of the ocean. Bottom fish are flaky and have a milder flavor when cooked. The bottom fish we carry include sea bass, grouper, snapper, rock cod, and halibut (fluke). We also offer a ďcatch of the dayĒ special, which can consist of a variety of bottom fish or open water fish that happen to be in stock the day you order.

Our fish is as fresh as you can get because we purchase directly from fishermen in California, Baja California and around the world who take great pride in providing the highest quality fresh seafood. We package our raw fish with care, keeping it cold in insulated boxes and ship it overnight with FedEx so that it reaches your door fresher than the vast majority of most supermarkets and restaurants. Calling all seafoodies! Treat yourself or someone you love to the gift of seafood! Our Seafood of the Month gives you access to all the unique seafood Catalina Offshore Products has to offer. As a Club member, you or your gift recipient will receive a shipment featuring two exciting seafood selections each month. Fresh from our fish market, right to your door!

The first Wednesday of each month we ship a box containing 3 lbs of seafood Ė enough to feed 3-5 people, or make two meals for 2. Each box contains one sushi grade product and one grilling product. Club members also receive a corresponding email with recipe or link to video tutorial.

Monthly seafood selections are based on availability. Depending on the variety, your seafood may arrive live, fresh, or frozen. (Many sushi grade products are frozen to preserve color and peak freshness.) Please consume live or fresh seafood within three days. Frozen portions can remain so for up to 6 months.

Simply choose the duration of your Club membership. Your initial shipment will go out the 1st Wednesday of the next applicable month*. Subsequent monthly shipments will follow every 1st Wednesday for the length of membership. Credit cards are charged each month on the Monday prior to the Wednesday shipping date.

If you wish for your Seafood of the Month Club shipment to be delivered on a different date, please contact one of our customer service reps at 619-704-3639 once you've placed your order. We can change your delivery date upon request but cannot guarantee the availability of that monthís club items. Substitutions may be necessary. Club recipients will receive an email each month to confirm the shipment arrival date.

*Cut off to receive your initial delivery for the next month is the 25th of the month prior.

Also known as moonfish, opah (Lampris guttatus) is a rich, full-flavored fish with good fat content and a flesh color that ranges from light pink to dark red.

The opah tenderloin displays a dark red color similar to beef. In fact, when grilled or seared over high heat this meat cooks up and practically tastes like steak! Cook opah tenderloin rare to medium to maintain its red color for a beautiful presentation and ocean fresh flavor. When cooked well done this fish presents white like albacore.

Opah have been caught incidentally in Pacific longline fisheries for years. Because opah donít swim in schools, they are typically caught one fish at a time. Fishermen once thought that this unusually colorful fish brought good luck, and would give it away as a goodwill gesture rather than sell it. There also wasnít much of a market for the fish. In the late 1980s, the state of Hawaii started promoting opah to build a market among U.S. consumers for this underutilized species. Today, demand is rising for opahís tasty and versatile meat, particularly among restaurants and chefs. Opah is approved by our partner in sustainability, Seafood for the Future.

The biggest advantage of properly frozen seafood is that it enables you to enjoy your favorite varieties year round! Sometimes people mistakenly refer to opah tri-tip as the cheek due to its position on the fish; however, the tri-tip comes from deeper inside the fish near its belly. Opah tri-tip displays a light red meat. Because it boasts a fattier texture, this cut is perfect for pan searing, broiling and frying.

Tip: because the shape of opah tri-tip is round, we recommend trimming the sides if you prefer to square up your portions. This will make for even cooking and more uniform presentation. Use the leftover trim for a seafood stir-fry!
