Considered a luxury fish, escolar is delicious as sushi and sashimi but can also be broiled, grilled, baked or sautéed. Wonderfully succulent, escolar provides great balance of flavor and a cream, buttery texture that melts in your mouth.

Our escolar saku is wild caught off the coast of California. In Japan the term saku means block. Because of its uniformity, the saku form is often preferred by Japanese chefs for sashimi and other sliced presentations. Note that we hand cut our escolar saku in house, which may result in blocks that are slightly irregular.

Once cut and deeply skinned, our escolar is vacuum packed and Proton frozen to preserve its sushi grade quality. Proton freezing is a technology that combines an environment of evenly distributed electromagnetic waves and cold air. This quick freeze method reduces ice crystal formation and reduces cell membrane damage. As a result, fish looks just like fresh if consumed within 30 days of purchase.

What’s in a Name?

Escolar (Lepidocybium flavobrunneum) is often referred to as butterfish, walu/waloo, or super white tuna. When you see the term "shiro maguro" on a sushi menu it is often either escolar or albacore tuna. Albacore is the only species allowed to be marketed as "white tuna" in the U.S. so be sure to ask the chef what's being served.

It’s even more important to ask because escolar contains wax ester oil, which has been known to cause gastrointestinal distress in some people. Pregnant women or individuals with malabsorption may be at an increased risk. Although most people have no issues with escolar, we recommend enjoying its richness in small portions. About 4-6 ounces at a time is just right.
