Also known as Pacific tilefish and blanquillo in Mexico, ocean whitefish (Caulolatilus princeps) are commonly found in San Diego, Santa Barbara and the Gulf of California along fairly deep, rocky offshore banks. The texture and flavor of this fish is superb. Its mild-flavored, pink-colored flesh cooks up white and holds together well yet still flakes easily. For best results, we recommend grilling, broiling, pan searing or smoking. If poaching or steaming, just take care not to go too long.
This fish is V-cut to remove pinbones.
