Reigning as one of the world's oldest fish species, sturgeon is famous for its caviar. However, it's also prized for its exceptional white meat!
Served at 3 Star Michelin restaurants, farmed Sterling California White Sturgeon boasts a succulent steak-like quality and mild yet unique flavor. Its abundance of high quality fat makes it nearly impossible to overcook, allowing it to be prepared in a variety of ways from baking, broiling and grilling to smoking and poaching.
Pair simply with a little salt, pepper and butter, or with bolder flavors such as curry. While it can be used in place of tuna, cod or swordfish, Sterling California White Sturgeon is also a delicious alternative to chicken and pork!
Wild sturgeon is scarce, but Sterling’s sustainable aquaculture operation provides a year-round source that's rated a Best Choice by Seafood Watch. The white sturgeon Sterling raises is native to North America's west coast, descended from wild stock that was borrowed from the Sacramento Delta decades ago. Fish are set up for a quality habitat at birth, raised in as close to their natural environment as possible. Exceedingly pure water recirculates 24 hours per day using an ozonation process that provides optimal conditions for the fish. Sturgeon are given a proportionate balance of both land and sea-based ingredients thus generating a more sustainable food supply; and raised without added hormones or antibiotics. Further, Sterling deeds recycled water for different eco-friendly purposes at each of its California farms, including creating artificial wetlands, nourishing feed land, wetting dry rice beds and creating buffer basins to protect wildlife.
