Ono is a Hawaiian word meaning “good to eat.” This fish is commonly known as wahoo (Acanthocybium solandri) and is a close relative of the king mackerel. It is characterized by its very elongated, tuna-like body, dark blue-green coloring on the top and silver on the sides, and a massive set of teeth.
Wahoo is often in high demand from seafood connoisseurs who prize it for its delicate, white, high-quality flesh. It offers a mild, sweet flavor with a large, circular-flaked texture. This a versatile fish; however, its firm, lean meat can dry out if not cooked with care. Grilled, broiled, blackened and sautéed will yield best results. Wahoo is also an excellent and popular choice for fish tacos!
