The term chutoro refers to fatty meat found near the skin of a tuna, not including the belly cut (toro). Chutoro is a medium fatty cut of tuna often preferred for its melt-in-your-mouth texture minus the distinct richness of toro, which is the fattiest part of the fish.
Landed in San Diego, our Eastern Pacific bigeye (Thunnus obesus) is one of the few tuna options on the market today that is considered a green-rated “Best Choice” or a yellow-rated “Good Alternative”. We receive this tuna direct from local fishermen, cut chutoro in house, and freeze the boneless, skinless portions in our Proton freezer at the peak of freshness!
Proton freezing is an emerging technology and we are one of only a few companies in the U.S. that are utilizing it. Proton freezing combines an environment of evenly distributed electromagnetic waves and cold air. It makes many small ice crystals at one time, preventing the forming of larger ice crystals. As a result, cells within the fish are not destroyed and loss of fluid upon thawing is reduced.
