Beloved throughout Southern California and Baja, wild yellowtail provides a firm and full flavored meat and excellent fat content -- though lower than its farmed counterpart. This fish may be baked, broiled or pan cooked for excellent results and fares particularly well on the grill. It also holds up to bold seasonings and marinades, making it great choice for blackening or adding into rich curries, stews or stir-fry.

Primarily caught by hook and line, our yellowtail (Seriola lalandi) is also known as southern amberjack, or by its Spanish name jurel. It is a sleek migratory fish recognized by its yellow tail and a yellow stripe across its body. It is harvested year-round, but more commonly during summer along the Pacific coast down into the Sea of Cortez.
