10-20 Sea Scallops, Frozen (IQF) Dry Pack

North Atlantic sea scallops (Placopecten magellanicus) are prized by chefs around the world for their sweet, delicate meat which appears creamy white to light tan or pink in color. The term 10/20 means you will receive 10 to 20 pieces per pound and “dry pack" means no water or chemicals have been added.
For your convenience, these scallops have been individually quick frozen (IQF), which allows you to use as many or as few as you need. They defrost in about 15 min and cook in about five, making quick work of any meal. We suggest searing them in brown butter and serving alongside roasted veggies or paring them with pasta or risotto!
Dating back to the 1960s, long-term declines in the abundance of Atlantic sea scallops caused new management measures to be introduced in 1994. This program included new restrictions on scallop permits and gear, size requirements and harvest limits, and placing vessel monitoring systems on limited access scallop vessels. Today, the New England Fishery Management Council manages Atlantic sea scallops in cooperation with the Mid-Atlantic Fishery Management Council under the Atlantic Sea Scallop Fisheries Management Plan (FMP). As a result, Atlantic sea scallop population levels are near record highs and the fishery operates at sustainable levels.
