Considered a luxury item in sushi bars, escolar is delicious as sushi and sashimi. It can also be broiled, grilled, baked or sautéed. Wonderfully succulent, escolar provides great balance of flavor and buttery texture that melts in your mouth. Our frozen sashimi grade escolar is a product of Interstate Seafood and originates from Korea. It is hand cut and vacuumed packed at our facility in San Diego, California. Fillets are skin off.
In sushi bars and on other menus, escolar (Lepidocybium flavobrunneum) is often referred to as butterfish, walu/waloo, or super white tuna. Referring to this fish as "tuna" can be problematic since it is often confused with albacore. It is important to note that albacore tuna is the only species which may be marketed as "white meat tuna" in the United States.
NOTE: We recommend enjoying escolar in small portions (4-6 oz), particularly if eating this fish for the first time. Escolar contains wax ester oil, which has been known to cause gastrointestinal distress in some people. Pregnant women or individuals with malabsorption may be at an increased risk.
