In Japan, gindara is the term for sablefish (Anoplopoma fimbria). Known more commonly in the U.S. as black cod, this species is beloved for its snow-white flesh, buttery flavor and silky mouthfeel. Gindara Sablefish is a brand of premium, sashimi-grade farmed sablefish originating from Kyuquot Sound on the northern west coast of Canada’s Vancouver Island. Unlike their wild counterpart, which can vary greatly in texture and size, farmed Gindara are consistently impeccable.
Delicate yet very firm, with an exquisite taste, Gindara Sablefish makes an outstanding choice for sashimi and sushi. It is equally exceptional when cooked. Miso Black Cod, the sweet-and-savory dish made famous by Nobu Restaurants, is among the most popular applications. The recipe has been adapted by chefs around the world and is surprisingly easy to make at home.
Gindara Sablefish are farmed under “Best Choice” sustainability guidelines as rated by Seafood Watch. Traceable from egg to plate, Gindara Sablefish are native to the area; cultured among the lowest population densities of any farmed animal, land or sea; and mature without the use of antibiotics, hormones, or chemical treatments.
The Gindara company is also a partnership of passion for community and environmental stewardship. The Kyuquot/Checleset First Nation granted permission to operate in its territory 20 years ago. Gindara has since become the largest employer – not only by providing jobs, but future opportunities for territory residents.
