King salmon boast a rounder mid-section in comparison to the longer, thinner body of the common Atlantic salmon species, resulting in generous fillets. King salmon are also naturally high in heart healthy omega-3 fatty acids. The result of this high oil content is a rich flavor and texture that makes king salmon a pleasure to eat. Fillets are skin off.
The coveted king salmon (Oncorhynchus tshawytscha) is the largest of the five species of wild Pacific salmon. Also known as Chinook, king salmon is highly sought after by chefs around the world.
