Sablefish (Anoplopoma fimbria) has been a favorite among fishermen since the late 1800s. Commonly referred to as black cod, sablefish is known for its succulent, buttery flavor and soft, velvety texture. In fact, it is often also called butterfish because of its melt-in-your-mouth consistency.
Contrary to its alternate names, sablefish is neither a cod nor a butterfish. It is found in deep water in the northeastern Pacific from northern Mexico to the Bering Sea and we receive the majority of ours from Santa Barbara. Wild sablefish from the U.S. is considered a "Best Choice" or "Good Alternative" by Seafood Watch.
