We sell white sea bass (Atractoscin nobilis) and corvina sea bass (Cynoscion parvipinnis). White Sea bass average 10 to 30 pounds, while Corvina Sea bass average 3 to 8 pounds. They are both caught by hook and line and by net year round but mostly during the spring and summer on the Pacific coast of California and Baja California as well as the Sea of Cortez. Sea bass are a moist tender white meat with a mild flavor, which is great for pan frying, poaching, or grilling. Fillets are skin off.
Fresh vs. Frozen
The biggest advantage of properly frozen seafood is that it enables you to enjoy your favorite varieties year round! At Catalina Offshore Products we portion our frozen fish from fresh fish we purchase from reputable fishermen. After we hand cut each fish at its peak of freshness, we freeze and vacuum pack individual portions in house and secure them in -10 degree coolers until ordered.
