The groupers we sell include baqueta (Epinephelus acanthistius), bayas (Mycteroperca jordani), and leopard grouper (Mycteroperca rosacea), which commonly referred to as cabrilla in Southern and Baja California.
Grouper is a mild, white fish high in oil and moisture. Its firm meat holds up to a variety of cooking methods, presenting best when grilled, pan fried or broiled. Fillets come skin off.
The average size of grouper is 5 to 20 pounds, yet some species can reach up to 6 1/2 feet long and 200 pounds. Most groupers are found in deeper waters of the Sea of Cortez. Groupers are caught year round, typically by hook and line, with best availability from January to July.
