We sell two types of halibut (flounder): California halibut (Paralichthys californicus) and Cortez halibut (Paralichthys aestuarius). Moist and tender, with white, mild-flavored meat, our local halibut are delicious when pan fried, poached or steamed. They also make an excellent choice for your favorite fish taco recipe! Fillets are skin off.
California halibut is found not too far off California's Pacific coastline. In Mexican fishing waters, the Cortez halibut may be found south of Magdalena Bay on the Pacific side of Baja California and throughout the Sea of Cortez. Both species are bottom-dwelling flatfish that camouflage themselves with the ocean floor. Cortez halibut typically range from 3 to 10 pounds, while Pacific halibut are about 5 to 20 pounds.
Note: Pacific and Cortez halibut should not be confused with the flakier Alaskan halibut.
