Manila clams (Tapes japonica) have a varied colored shell that is round in shape. Their meat is sweet and plump, and their petite size makes them very easy to work with. As a result they are a favorite among professional chefs and shellfish connoisseurs alike.
Most cooking presentations will call for steaming. Take care not to cook Manila clams alongside other varieties as they only need only about 3-5 minutes to steam open*. They are a great addition to soups and pastas, but are exquisite when steamed in their own liqueur with butter, white wine, garlic and parsley, and served with crusty Italian bread.
Our Manila clams are a product of Mac’s Oysters LTD, a fourth-generation family shellfish farm and the original shellfish processor in Fanny Bay, located in British Columbia.*Any clams that do not open during steaming should not be consumed.
