Pacific snapper (Lutjanus peru), also known as huachinango, in is a true snapper typically found along the west coast of Baja, and southern Sea of Cortez. The smaller size of this fish (1-2 lbs) makes it a perfect starter fish for whole fish cooking. Try it deep fried, baked, broiled poached or grilled. Because it feeds on crabs, mollusks, octopuses, shrimp, and small fish, Pacific snapper boasts a great, firm texture and sweet, nutty flavor that lends itself to everything from hot chilies to subtle herbs. Each whole 1-2 pound fish can serve 2-3 people.
The Pacific red snapper is highly prized as table fare and is an essential export product of Mexico. They are caught by artisan fishermen who still fish in the old ways - from small, day boat pangas with traditional handlines and non-invasive hand drawn nets.
