Our white sea bass are caught by hook and line and by net year-round but mostly during the spring and summer off the Pacific coast of California and Baja, as well as the Sea of Cortez. Proton freezing allows us to preserve this local favorite at peak freshness, which allows you to enjoy this fish year round!
What Does Proton Frozen Mean?
Proton freezing is a quick-freeze technology that reduces ice crystal formation, which is the prime cause of damage to products that are slow frozen in traditional freezers.
